Quinoa with Tomatoes
Ingredients:
- Diced tomatoes – 3 cups
- Chicken stock – 2 cups
- Corn – 15 oz (1 can)
- Eggs – 12
- Quinoa – 1 cup
- Sweet peppers – 5
- Onions – 2
- Chives – ¼ cup
- Olive oil – 2 tablespoons
- Soy sauce – 1 tablespoon
- Cayenne pepper – ¼ teaspoon
Instructions:
- Cook the Quinoa:
- Wash the quinoa well.
- In a pot, bring chicken stock to a boil, then reduce heat, cover, and simmer until the liquid has evaporated (about 15 minutes).
- Prepare the Vegetables:
- Chop the onions and sweet peppers.
- In a skillet on high heat, sauté diced tomatoes with olive oil for 5 minutes.
- Add chopped sweet peppers and onions, stirring on high for 3 minutes.
- Add cayenne pepper and continue stirring.
- Combine Ingredients:
- Reduce heat and add eggs, stirring constantly for about 3 minutes.
- Add soy sauce, cooked quinoa, corn, and chives.
- Mix together, cover, turn off the heat, and let sit for 2 minutes.
