How to Make Quinoa with Tomatoes

Quinoa with Tomatoes

  • Diced tomatoes – 3 cups
  • Chicken stock – 2 cups
  • Corn – 15 oz (1 can)
  • Eggs – 12
  • Quinoa – 1 cup
  • Sweet peppers – 5
  • Onions – 2
  • Chives – ¼ cup
  • Olive oil – 2 tablespoons
  • Soy sauce – 1 tablespoon
  • Cayenne pepper – ¼ teaspoon
  1. Cook the Quinoa:
    • Wash the quinoa well.
    • In a pot, bring chicken stock to a boil, then reduce heat, cover, and simmer until the liquid has evaporated (about 15 minutes).
  2. Prepare the Vegetables:
    • Chop the onions and sweet peppers.
    • In a skillet on high heat, sauté diced tomatoes with olive oil for 5 minutes.
    • Add chopped sweet peppers and onions, stirring on high for 3 minutes.
    • Add cayenne pepper and continue stirring.
  3. Combine Ingredients:
    • Reduce heat and add eggs, stirring constantly for about 3 minutes.
    • Add soy sauce, cooked quinoa, corn, and chives.
    • Mix together, cover, turn off the heat, and let sit for 2 minutes.
  • Preparation Time: 20 minutes
  • Cooking Time: 20 minutes
  • Total Time: 40 minutes
