How to Make Barley Soup

Barley Soup

  • Beef – 1 pound
  • Beef broth – 32 fluid ounces
  • Pickles – 32 fluid ounces (grated, brine reserved)
  • Hot water – 32 fluid ounces (or more if needed)
  • Barley – 1 cup
  • Potatoes – 8 ounces
  • Baby carrots – 8 ounces
  • Onion – 1
  • Dried dill – 2 tablespoons
  • Olive oil – 1 tablespoon
  • Salt – 1 tablespoon
  1. Prepare the pickles: Pour the pickle brine into a glass and set aside. Grate the pickles on the coarse side of a grater.
  2. In a pot, combine olive oil and beef. Sauté for 5 minutes until the liquid evaporates.
  3. Add the diced onion and salt. Sauté for another 3 minutes, stirring constantly.
  4. Pour the reserved pickle brine into the pot. Add the beef broth and hot water.
  5. Add the washed barley, chopped potatoes, and chopped carrots. Stir to combine.
  6. Bring to a boil, reduce heat, and cook for 20 minutes.
  7. Add the grated pickles and dried dill. Boil for another 5 minutes before serving.
