Beef with Sweet Peppers
Ingredients:
- Beef Top Round – 2 lb
- Sweet Pepper – 3
- Yellow Onion – 1
- Red Onion – 1
- Lemon – 1
- Olive oil – ¼ cup
- Chives – 2 tablespoons
- Dried garlic – 1 tablespoon
- Salt – 1 teaspoon
- Black pepper – 1 teaspoon
Instructions:
- Preparation:
- Remove seeds from sweet peppers and chop them.
- Chop the yellow and red onions.
- Cut the beef top round into 1/2-inch pieces.
- Cooking:
- Transfer the beef to a 12” skillet and turn to high heat.
- Add olive oil, salt, dried garlic, and black pepper. Stir for about 3 minutes.
- Squeeze a lemon over the beef and continue stirring for another 7 minutes.
- Add the chopped onions and sweet peppers; stir for about 3 minutes.
- Add chives and stir for 1 more minute, then turn off the heat.
