How to Make Chicken Noodle Soup

Chicken Noodle Soup

  • Chicken broth – 32 ounces
  • Hot water – 32 ounces (or more if needed)
  •  Chicken thigh – 24 ounces
  •  Celery – 16 ounces
  •  Whole wheat spaghetti – 8 ounces
  •  Potatoes – 8 ounces
  •  Baby carrots – 8 ounces
  •  Onion – 1
  •  Parsley – 1 bunch
  •  Apple cider vinegar – ¼ cup
  •  Olive oil – 2 tablespoons
  •  Organic no salt seasoning – 1 tablespoon
  •  Salt – 1 tablespoon
  •  Bay leaves – 2
  1. In a 6-quart pot, combine apple cider vinegar and chicken thighs. Turn on high heat and stir until the meat releases water (about 5 minutes). Drain the liquid.
  2. Pour in olive oil, then sauté diced onion and minced parsley for 5 minutes.
  3. Sprinkle in salt and seasoning, then pour in chicken broth.
  4. Mix in chopped celery, carrots, potatoes, and add hot water. Stir to combine.
  5. Bring to a boil, reduce heat, and simmer for 15 minutes.
  6. Drop in broken spaghetti and bay leaves. Cook for another 10 minutes or until noodles are tender.
  7. Discard bay leaves, garnish with extra parsley, and serve hot.
