Daikon, Japanese radish is like other radishes an edible root vegetable of the mustard family. To remove excess bitterness and give a richer taste, after chopping, add salt and leave for 5-10 minutes. Cucumber with extra virgin olive oil and arugula will not only fill the salad with healthy nutrients, but also give it a delicious taste. This salad goes well with boiled eggs and can be used as a light dinner. It can also be served as a side dish. Enjoy my daikon salad recipe!
Daikon Salad
Ingredients:
- Daikon – 1
- English cucumber – 1
- Arugula – 5 oz
- Dill – 1 bunch
- Extra virgin olive oil – ¼ cup
- Salt – 1 teaspoon
Instructions:
- Shred the daikon into a mixing bowl and sprinkle with salt. Let it sit for 5 minutes.
- Shred the cucumber and add it to the bowl along with the arugula.
- Add extra virgin olive oil and fresh minced dill, then mix everything well.
