Blueberry Coffee Cake Recipe
Ingredients:
Batter
- All-purpose flour – 2 cups
- Sugar – ½ cup
- Salted butter, melted – 8 tablespoons
- Baking powder – 1 tablespoon
- Milk – 1 cup
- Vanilla extract – 1 teaspoon
- Egg – 1
- Wild blueberries, frozen – 2 cups
Sweet Crumb Topping
- Walnuts, chopped – ½ cup
- Brown sugar – ¼ cup
- All-purpose flour – ¼ cup
- Salted butter, melted – 2 tablespoons
Glaze
- Powdered sugar – ½ cup
- Milk – 2 tablespoons
Instructions:
- Preheat Oven: Preheat oven to 350°F.
- Prepare Baking Dish: Grease a 9 x 13-inch glass baking dish with 1 tablespoon of softened salted butter.
- Make Sweet Crumb Topping: In a bowl, combine walnuts, brown sugar, all-purpose flour, and melted butter. Mix until crumbly.
- Prepare Glaze: In a separate bowl, mix powdered sugar and milk until smooth.
- Make Batter: In a large bowl, combine all-purpose flour, sugar, melted butter, baking powder, milk, vanilla extract, and egg. Mix for 2 minutes.
- Assemble Cake: Pour half of the batter into the baking dish and spread evenly. Sprinkle with frozen wild blueberries, then spread the remaining batter on top.
- Add Topping: Sprinkle the sweet crumb topping over the batter.
