Lamb with Mushrooms

  • Lamb – 5 lb
  • Baby Bella Mushrooms – 1 ½ lb
  • Onions – 3
  • Olive oil – 1 cup (divided)
  • Garlic – whole bulb
  • Sour cream – 2 tablespoons
  • Salt – 1 tablespoon (divided)
  • Potato starch – ½ tablespoon
  • Black pepper – ½ tablespoon

Marinade:

  • Garlic – whole bulb
  • Black pepper – ½ tablespoon
  • Salt – ½ tablespoon
  • Olive oil – ⅓ cup
  1. Marinate the Lamb:
    • Mix garlic, black pepper, salt, and olive oil in a blender.
    • Thinly slice and tenderize the lamb.
    • Rub the lamb with the marinade, cover with plastic, and refrigerate.
  2. Prepare the Mushrooms:
    • Slice mushrooms and chop onions.
    • In a pot on high heat, sauté mushrooms with ¼ cup olive oil and ½ tablespoons salt for 3 minutes.
    • Add onions and continue stirring for 3 minutes.
    • Add sour cream and potato starch, stirring for another 4 minutes.
  3. Cook the Lamb:
    • In a 12-inch skillet, heat ¼ cup olive oil on medium.
    • Cook lamb, turning over every 2 minutes for a total of 6 minutes until ready.
