How to Make Stuffed Peppers

Stuffed peppers are a classic, hearty meal that combines savory ground beef, aromatic Basmati rice, and fresh vegetables into one delicious package. This recipe is perfect for a family dinner and yields 6 servings.

Stuffed Peppers

  • Basmati rice: 2 cups
  • Water: 6 cups (divided)
  • Tomato juice: 33.4 fl oz (1 L)
  • Ground beef: 1 lb
  • Giant bell peppers: 6
  • Mushrooms: 6 oz
  • Onion: 1
  • Butter: 1 tablespoon
  • Salt: 1 teaspoon
  • Black pepper: 1 teaspoon

  1. Prepare the Rice
    • Wash 2 cups of rice well.
    • Bring 3 cups of water to a boil.
    • Cook rice for 3 minutes, then cover and turn off the heat.
    • Let it sit for 10 minutes.
  2. Prepare the Filling
    • Dice the mushrooms and the onion.
    • In a large bowl, combine the ground beef, salt, and black pepper.
    • Mix in the diced mushrooms, onion, cooked rice, and butter. Mix well.
  3. Stuff and Cook
    • Remove the cores from the 6 giant bell peppers.
    • Fill each pepper with the meat and rice mixture.
    • In a large pot, combine 3 cups of boiled water and the tomato juice.
    • Bring to a boil, then carefully add the peppers.
    • Reduce heat to low, cover, and cook for 20 minutes.
  • Preparation Time: 35 minutes
  • Cook Time: 25 minutes
