How to Make Stuffed Peppers

Stuffed Peppers are a delightful and colorful dish, perfect for any occasion. This recipe combines hearty ground beef with nutritious quinoa, vibrant vegetables, and a blend of spices to create a flavorful filling. Topped with Parmesan cheese, these peppers are not only visually appealing but also packed with taste and nutrition, making them a favorite for both family dinners and special gatherings.

Stuffed Peppers 

  • Ground Beef – 1 lb
  • Water – 3 cups (2 cups for quinoa, 1 cup for baking)
  • Quinoa – 1 cup
  • Bell Peppers – 6
  • Small Zucchini – 1
  • Red Onion – 1
  • Baby Bella Mushrooms – 8
  • Lime Juice – ¼ cup
  • Parmesan Cheese – 3 tablespoons
  • Dried Garlic – 1 tablespoon
  • Paprika – 1 tablespoon
  • Salt – 2 teaspoons
  • Thyme – 1 teaspoon
  • Smoked Paprika – 1 teaspoon
  • Cayenne Pepper – ½ teaspoon
  1. Cook Quinoa:
    • In a pot, add washed quinoa, 2 cups of water and bring to a boil.
    • Reduce heat, cover, and simmer until the liquid has evaporated (about 15 minutes).
  2. Preparation:
    • Chop the small zucchini, red onion, and Baby Bella mushrooms.
  3. Make Filling:
    • Combine cooked quinoa, chopped red onion, zucchini, mushrooms, ground beef, cayenne pepper, smoked paprika, thyme, dried garlic, paprika, salt, and lime juice in a bowl. Mix well.
  4. Prepare Bell Peppers:
    • Cut bell peppers lengthwise and remove seeds.
  5. Assemble:
    • Preheat oven to 400°F (200°C).
    • In a 9 x 13-inch glass baking dish, fill bell peppers with the stuffing.
    • Add 1 cup of water to the dish and cover with foil.
  6. Bake:
    • Bake in the preheated oven for 50 minutes until the meat cooked.
  7. Serve:
    • When ready, sprinkle Parmesan cheese on top before serving.
  • Preparation Time: 40 minutes
  • Baking Time: 50 minutes
  • Total Time: 1 hour 30 minutes
